Spätburgunder is the noblest red grape. It loves northern regions, where it can ripen slowly and delicately. Pinot Noir in its homeland of Burgundy creates a velvety, rich ruby red wine that reflects the character of its vineyard in the glass. The best wines from Burgundy are the most expensive red wines in the world.
However, as far back as the 12 th century Cistercian monks brought this sensitive grape variety to the Rheingau and around 1900 a ‘ Red Hock ' cost as much as a ‘Volnay'.
The climate and topography have not changed, nor has the potential to create great red wines in the superbly warm Reichestal location. However, the Pinot Noir is a hypersensitive ‘Madame' among the vines, one that only yields outstanding wines with limited harvesting and very careful vinification.
We therefore remove most of the grapes as early as August to ensure better ripening of the remaining grapes. That is the prerequisite for a superior red wine: less is more!
