The ability to retain its acidity as it matures makes Riesling the ideal vine for naturally sweet Auslesen and Beerenauslese. However, it is just as good as a fresh, light and taste-intensive dry Kabinett or as a full-bodied Spätlese or Auslese with a lingering finish.
Riesling is a great individualist that reacts sensitively to the environment. For this reason, it is also the German variety that most accurately reflects the vineyard origin: wines from heavy soils are weighty with a lingering finish, while fine slate earth gives Riesling a fascinating elegance.
